Backwoods Brewing Company Launching A New Seasonal Series- “Experimental Forest Series” Starting Next Week

Courtesy of Backwoods Brewing CO
Carson, WA (February 25, 2016) - Backwoods Brewing Company is launching a new seasonal series, starting next week. “Experimental Forest Series” will comprise of three seasonal styles in 22oz bottles and draft. The first style is a peppercorn saison, named “Spring Creek Saison”. Brewmaster, Kevin Waters, had the chance to brew the farmhouse ale while traveling in Europe last year. He visited Amundsen Brewery in Oslo, Norway, where they concocted the recipe, and put it to the test. “The end result was incredible,” commented Waters. “Slightly dry, with fruit notes and then a hint of peppercorn, with just enough spice to make you want more.” The beer clocks in at 4.7 % ABV and 22 IBU.

The other two styles to follow will be a single hop IPA and a pecan pie porter. The IPA will launch in June and will be made with Vic’s Secret hops, which are harvested out of Australia, and have only been used commercially since 2013. Waters added, “We brewed a draft-only version of this beer last year and it was a huge hit, so we’re happy to be able to offer it up to the whole NW market.” Vic’s Secret is known for its distinct pine and pineapple aroma and tasting notes. Backwoods has yet to name the single hop IPA.

The third seasonal, the pecan pie porter, will be released mid-late September, and will finish out the series. Going with the theme of tried and true, Backwoods had brewed two batches of this beer last year and it was received extremely well. “We brewed the first batch, not knowing if it would do well or be a complete flop. But a week later it was gone and people wanted more! So we brewed it again,” said Waters.

Spring Creek Saison will hit the shelves Monday, February 29th. Several local beer & bottle shops, including The Beer Station in Wilsonville, and Belmont Station in Portland, are hosting tastings that will feature the saison, as well as some core Backwoods beers. More information can be found on Backwoods’ website: www.backwoodsbrewingcompany.com.

Just an hour east of the Portland-Vancouver area, Backwoods was established in 2012 by the Waters family as a single barrel brewpub. It has grown since, moving to a 7-barrel, and now a 20 barrel system that it currently brews on in their new Stevenson facility. Their distribution serves all of Washington, NW Oregon and Boise, ID, including grocery stores such as Zupans, Whole Foods, New Seasons, Total Wine, Market of Choice and Fred Meyer. The brewery produced approximately 5000 barrels in 2015, and has set a goal of 7500 barrels for 2016. The brewpub in Carson is open 7 days a week, and welcomes all ages.

Everybodys Brewing Releasing "Biscuit Shooter" Sourdough RyePA A collaboration beer for the 2016 Chef’s Week PDX

Everybody's Brewing Announces Details of Unique Collaboration for Chefs Week PDX

White Salmon, WA - Chefs Week PDX, the week-long culinary event held throughout Portland, pairs West Coast and local chefs to collaborate on dinners, desserts, and parties. This year, Chefs Week PDX invited two breweries to join the fun. Everybody's Brewing (White Salmon, WA), and Double Mountain (Hood River, OR) were each paired with prominent Portland chefs to create a beer together.

Everybody’s Brewing was paired with local pastry chef Eve Kuttemann, known for her work at Castagna, Trifecta Tavern, and her own pop-up, Sage Hen. The team from Everybody’s was lead by head brewer Jess Caudill, well known in the beer industry for his brewing skills, and his vast knowledge of yeast. (Caudill is also co-owner of the Portland based company: Imperial Organic Yeast).

Their goal was to make a beer truly inspired by Kuttemanns baking, which often explores old American recipes. The result was a very unique concept. They decided to attempt to ferment a beer with the wild yeast strain Kuttemann uses in her sourdough bread.  A technique that is rarely used in modern, commercial brewing.
Brewer Adam McClure running tests on the yeast - Courtesy Everybody's Brewing Co
Caudill took a sample of yeast to the lab at Everybody’s to examine.  “Most brewer’s yeast has been propagated to isolate and remove unwanted bacteria. We knew there would be some living in the yeast, and needed to see specifically what kinds.” He was impressed with what he found. “I saw an interesting blend of bacteria, and nothing that needed eliminating. We were able to use her exact culture, which will truly showcase the flavor of Eve’s sourdough bread.”

In classic Northwest fashion, they chose to brew an IPA, highlighted with Citra, Galaxy, and El Dorado Hops. Kuttemann then spent a day in White Salmon, brewing along-side the team at Everybody’s. “Beer and bread-making have so many similarities, but use completely different techniques to extract flavor, so I’m excited to see how the beer highlights the various and complex aspects of the starter.  The entire process was fun, and really exemplified the creativity that Chefs Week PDX is all about.”

The beer will be called “Biscuit Shooter” Sourdough RyePA, a reference to the camp cook on cattle drives in the old American West, where sourdough biscuits were a staple.  It will be available on draft in Portland starting Feb. 1. Chefs Week PDX runs Feb. 3rd through the 7th. For more information about events, check out www.chefsweekpdx.com.

Loowit Brewing Releasing Blunderbusser July 16th

Courtesy of Loowit Brewing Co

July 13, 2015 Vancouver, WA - Loowit Brewing Company is pleased to announce the release of Blunderbusser, a recreation of a historic German beer style known as Kotbüsser. The Kotbüsser style was nearly lost to time when it became outlawed and illegal to brew in the late 1800’s under the German beer purity law due to some of it’s ingredients. The purity law states beer must be made with water, barley and hops. In addition to water, barley and hops, a Kotbüsser features other ingredients that make it special such as honey, molasses, wheat and oats. Blunderbusser pours a pale gold with brite white head and full, creamy body while the hops and honey lend themselves to delicate, floral aromatics. This is a fantastically refreshing summer beer. Blunderbusser will be released in the Loowit tap room on Thursday, July 16th.

ABOUT BLUNDERBUSSER:
Style: German-style Kotbüsser ABV: 5.0%
IBU: 19
Fermentables: Pilser malt, wheat malt, flaked oats, honey, molasses. Hops: Mt. Hood, Sterling

Adding to an exciting list of new features, an in-house kitchen is slated for launch this fall. Occupied and run by the team from popular food truck Bread & Circuses, food will be available for purchase during normal tasting room hours, including delicious items such as Fritto Misto, Nori wrapped salmon bites, prosciutto wrapped figs stuffed with chèvre and aged balsamic, slow braised oxtail risotto and more.
