Stone Brewing to Open Napa, California Tap Room and Pilot Brewery

Renovations begin on 10,000 square-foot historic downtown building

 

ESCONDIDO, CA (May 20, 2016) – Stone Brewing will begin renovations to a 10,000 square-foot iconic building in downtown Napa, bringing its bold and flavorful craft beer to the region well-known for its amazing wine. Stone’s newest outpost, located on 3rd Street and Soscol Avenue, will include a pilot brewing system, a dining experience, growler fills and Stone merchandise.

“The historic Borreo building is the perfect space for us to put down our roots in Napa,” said Greg Koch, Stone Brewing CEO & co-founder. “Not only is it literally made of stone, it’s one of downtown’s most iconic links to the 19th century and a landmark that’s been vacant for the past 15 years. We recognize the high quality of wine that comes from the region and the appreciation that Napa Valley locals and visitors have for fresh, well-crafted drink. We are elated to become a contributing part of such an artisanal town.”

The 10-barrel pilot brew system will enable brewers to produce Stone’s iconic bold and innovative beer using core recipes as well as indigenous ingredients from the local geography. The Stone Brewing Tap Room - Napa will fill growlers and serve Stone’s year-round beers as well as special releases brewed onsite.

Stone’s food philosophy will carry over to its newest Tap Room with a dining experience that incorporates the local Napa flavors for enjoyment on premise or to take away picnic style. Stone proudly specializes in locally grown, small-farm ingredients and features an eclectic menu of world-inspired cuisine and a unique take on comfort food. As strong advocates for environmental responsibility and high-quality food, Stone will purchase local and small-farm organic produce from the Napa region. Making the most of outstanding weather is something the San Diego-based company is quite familiar with. Locals and tourists visiting Stone Brewing Tap Room - Napa will enjoy an outdoor seating area complete with communal tables, fire pits and views overlooking downtown Napa.

The historic Borreo building, named for the family that formerly owned the historic stone structure, is an Italianate Renaissance design made from native-cut stone. It was completed in 1877 and has been vacant since 2001. While keeping historic elements in place, Stone plans to transform the building’s western wall, adding expansive doors to a stunning garden facing the Napa River.

“I’m a huge Napa fan,” said Koch. “I’ve been visiting for more than 20 years and I first toured through the Borreo Building nearly five years ago. We’ve tried a few times to make something happen there, and are thrilled to finally see it come to fruition!”

With an anticipated opening in 2017, Stone Brewing Tap Room - Napa joins two expansion projects already underway for the growing company. Stone Brewing World Bistro & Gardens - Berlin will open its doors in Germany this summer. Stone Brewing - Richmond will begin supplying fresh Stone beer from its 250-barrel brewhouse in July.

In my unprecedented and uncompromising celebration of intensity, I openly challenged these commodity beer overloads and their multi-million dollar ad campaigns.

Stone Brewing Releases Collaboration with Sierra Nevada Brewing

North and south converge to create Stone & Sierra Nevada NxS IPA
 
ESCONDIDO, CA (Dec. 7, 2015) — For many, California has been the epicenter of craft brewing innovation for the last few decades, especially where hop-centric beers are concerned. So in an effort that spans the state and is decades in the making, Stone Brewing Co. has joined forces with the iconic, Northern California-based Sierra Nevada Brewing Co., which together have a combined 50+ years of brewing experience. The result: Stone & Sierra Nevada NxS IPA (NxS = North by South). Beginning today, the latest Stone Collaboration beer—a barrel-aged IPA blended with a fresh, dry-hopped batch of the same IPA—will begin rolling out in 22-ounce bottles and on draft to select retailers in markets where Stone beer is sold. 
 
To create this significant collaboration, batches of an IPA were brewed and bittered with Magnum hops before providing the backdrop for a three-way late-kettle addition involving Amarillo, Chinook and Cascade. Given that whole flower Cascade hops have been a mainstay in Sierra Nevada’s beer portfolio, the classic hop varietal was necessary for this creation. The first batch, created months earlier, was split down the middle, with 50 percent being aged in gin-infused bourbon barrels and the other half making its way into rye whiskey barrels. The aged portions were then blended with a new, fresh batch of IPA, which was generously dry-hopped to impart rich hop aromas to accompany the citrusy, piney, woody, spice flavors of this multilayered collaboration.
 

To experience the extra dose of hops blended with oak and spirit flavors, the beer should be enjoyed fresh. Over time, the hop qualities will subside, allowing for more prevalent spicy notes of spirits and oaky vanilla character to shine through. Stone & Sierra Nevada NxS IPA is a meaningful representation of two renowned breweries embracing craft beer camaraderie and showcasing their brewing prowess.

Stone Brewing Co. Releases Sorry Not Sorry IPA a Collaboration With 4 Hands Brewing and Bale Breaker Brewing

ESCONDIDO, CA (November 9, 2015) – Stone Brewing Co. is sorry for providing yet another IPA…but not really. The craft beer company is only guilty of one thing: Being an unapologetic band of hopheads eternally psyched to continue exploring the ever-expanding possibilities of India pale ales. For its latest collaborative beer, Stone teamed up with 4 Hands Brewing Co. and Bale Breaker Brewing Company—two rising stars of American craft brewing—to create 4 Hands / Bale Breaker / Stone Sorry Not Sorry IPA. This imperial IPA brewed with experimental hops and peaches will start arriving today in 22-ounce bottles and on draft at retailers, restaurants and bars where Stone beer is sold.

The concept of this IPA started forming after Stone Brewmaster Mitch Steele was encouraged by Team Stone members to visit and sample beers from 4 Hands. Steele was impressed with their lineup, and the St. Louis-based beer company was added to Stone’s “awesome breweries to collaborate with” list. During last year’s hop selection in Yakima, WA, Stone Lead Brewer Jeremy Moynier and Steele stopped by Bale Breaker, a craft brewery that had recently opened on the storied B.T. Loftus Ranches hop farm. While enjoying a few heavily hopped IPAs, Moynier and Steele knew this would be the perfect addition to the admittedly hop-obsessed trio.

“The family operating B.T. Loftus Ranches and Bale Breaker has been growing hops since 1932, so there’s no doubt they are hop fanatics like us here at Stone,” explains Steele. “Plus, 4 Hands Brewing Co. has made some amazing beers that use unconventional brewing ingredients to accentuate the qualities of hops. This beer truly reflects the skills of three brilliant IPA brewers.”

When brainstorming recipe ideas, it was decided that Simcoe and Mosaic hops were a must, especially since B.T. Loftus Ranches was the first hop farm to commercially grow the beloved Simcoe varietal. But the goal of Stone Collaborations is about exploring uncharted territory. Thus, the trio decided that puréed peaches should be added to up the fruit factor, while experimental hops HBC 342 and HBC 344 were selected to provide notes of pine, berries, citrus and stone fruit. Thanks to Munich malt used for the grain bill, the beer has a golden, light-brown appearance and a slightly sweet finish, which perfectly balances the smooth hop bitterness.

To experience these newly cultivated hops and in all their glory, fans should enjoy 4 Hands / Bale Breaker / Stone Sorry Not Sorry IPA fresh and within 90 days after “bottled on” date on the bottle neck. This beer is a magnificent example of what happens when talented brewers band together to explore new hoppy territory for the IPA. After all, who says the world needs another IPA? We do!

Tasting Notes

Appearance: Pours a golden, light-brown color.
Aroma: As expected, hops dominate the aroma with lots of pine, resin and stone fruit (peach/apricot) qualities. Hints of peach nectar are also apparent as the beer warms and opens up.
Taste: Fruity and hoppy, the hops provide a blend of stone fruit, piney-hop resin and hints of dankness, tropical fruit and citrus. There are prevalent peach fruit flavors that really complement the hops, especially as the beer warms up. The Munich malt provides some nice color and balance to the hop bitterness, and the beer finishes slightly sweet with a very smooth bitterness.
Palate: Rounded but bitter with some light sweetness
Overall: Two of our favorite new breweries joined us for this fun collaboration. 4 Hands Brewing Co. of St. Louis and Bale Breaker Brewing Company of Moxee, Washington, are good friends and great brewers, and they certainly love their hops. So when we first started talking about brewing, the idea of brewing a double IPA was the only option that was really ever on the table. The team at Bale Breaker helped us secure an experimental hop, currently named HBC 344, for use in this beer. To that we added another experimental hop that we had here at Stone, HBC 342. And then we added some Simcoe and Mosaic for good measure. We talked at length about adding some fruit to the beer that could complement the hop character, and the team at 4 Hands suggested peaches, which sure enough combines with the stone fruit character of the hops wonderfully.

Stone Brewing Releases Stone Coffee Milk Stout

 Escondido, CA (Oct. 6, 2015) – Back for the cold(er) weather months, Stone Brewing Co. is releasing freshly brewed batches of Stone Coffee Milk Stout. While the recipe remains essentially the same, this year the bittersweet, creamy, coffee-laced stout has a slightly elevated alcohol content, ringing in at 5 percent alcohol by volume (ABV). Beginning this week, the beer starts arriving in 12-ounce six-packs and on draft at retailers, restaurants and bars where Stone beers are sold.


 Mild ale malt was used as a base grain to help create a rich, roasty character, and other specialty grains contribute cocoa, licorice and subdued coffee flavors. Magnum hops bring a clean bitterness, gently contrasting with the beer’s malt-forward qualities. Brewed with whole coffee beans from San Diego-based roaster Ryan Bros Coffee, the bitterness of the coffee is balanced out brilliantly by the addition of milk sugar, which provides sweetness and creaminess to the stout’s smooth, easy-drinking texture. Those inviting flavors are supported by a bumped-up malt bill, giving this year’s version more body and a bit more oomph in the ABV department (from 4.2 to 5 percent).

“The recipe for this beer was originally brewed on the 10-barrel pilot system at Stone Brewing World Bistro & Gardens - Liberty Station as an experimental, one-time offering,” said Stone Brewmaster Mitch Steele. “Since we were really pleased with the original brew of Stone Coffee Milk Stout and how well received it was among our fans, we decided to make it available nationwide as an annual release, making only minor adjustments to this year’s recipe. Fans should still expect to enjoy the same roasty malt character but now with a richer mouthfeel and slightly fuller body. ”

Stone Coffee Milk Stout is a smooth combination of sweet and bitter coffee flavors that work well with a diverse selection of foods. For the purpose of maximizing enjoyment or exhibiting appreciation for the beer, fans are encouraged to share photos of their favorite Stone Coffee Milk Stout food pairings on Twitter, Facebook, InstagramGoogle+, Pinterest using #PairedWith.

This beer will only be available during fall and winter, the ideal seasons for savoring rich, coffee-accented ales. Enjoy Stone Coffee Milk Stout fresh or store it at proper cellaring temperatures (55°F or lower) for up to one year after its “bottled on” date, which can be found on the shoulder of the bottle.

Juli Goldenberg/Monkey Paw/Stone 24 Carrot Golden Ale Available Today

 ESCONDIDO, CA (Oct. 5, 2015) – To highlight the homebrewing talent that helps foster innovation among the craft beer community, Stone Brewing Co. hosts an annual Stone Homebrew Competition & American Homebrewers Association (AHA) Rally. This year’s prize-winning contender was created by Juli Goldenberg, QUAFF (Quality Ale and Fermentation Fraternity) homebrew club member and founder of the San Diego Suds Sorority. San Diego-based Monkey Paw Brewing Company was later asked to complete the collaborative trifecta. A creative recipe inspired by carrot cake, Juli Goldenberg/Monkey Paw/Stone 24 Carrot Golden Ale is a Belgian-style golden strong ale infused with carrot juice, milk sugar, raisins, cinnamon and vanilla beans. Today, the latest Stone Collaboration beer will begin arriving in 22-ounce bottles and on draft at retailers, restaurants and bars in markets where Stone beers are sold.

Earlier this year, 27 talented participants vied for the prize: the opportunity to have their imaginative creation brewed on Stone’s large-scale, 120-barrel brewing system and distributed nationally. After AHA members submitted selections for a top pick, a panel of judges—Stone co-founders Steve Wagner and Greg Koch, Craft Beer Ambassador “Dr.” Bill Sysak, and members of Stone’s Small Batch Team and Quality Assurance Department—spent a great deal of time and deliberation making sure the blue ribbon went to the most deserving of the bunch. In the end, Goldenberg’s carrot cake-framed Belgian ale earned the top honors, making her the first female brewer to win the competition.

“If we followed Juli’s exact recipe, more than 10,000 pounds of shredded carrots would have been needed per batch,” explains Stone Brewmaster Mitch Steele. “That’s a heck of a lot of carrots! Luckily, we were able to source locally produced carrot juice concentrate of amazing quality that has a bright orange color and lots of fermentable sugars, which contributed to a final result that tastes just like carrot cake with cream cheese frosting.”

When formulating her creation, Goldenberg relied on unconventional brewing ingredients to emulate the rich, complex characters of this dessert. The malt bill provides a perfect backbone for the special ingredients to shine through, while the hops contribute enough bitterness to balance the multitude of flavors and aromas. Raisins, carrots and milk sugar were incorporated during the brewing process, giving way for a medium body that’s creamy and smooth. Vanilla beans and cinnamon were added after fermentation to replicate aroma and taste similar to cream cheese frosting.
 

“This has been a great opportunity and I really enjoyed working with the Stone Brewing Team to re-create my recipe,” says Goldenberg. “Since Monkey Paw Head Brewer Cosimo Sorrentino is a good friend of mine and a San Diego brewer I truly respect, he was the first person I thought of when asked who should be the third collaborator. Plus, with his culinary background, Cosimo is adept at marrying characteristics of food and beer, a trait that comes in handy when brewing a carrot cake-flavored ale!”

To fully enjoy the beer’s delectable flavors, Juli Goldenberg/Monkey Paw/Stone 24 Carrot Golden Ale should be enjoyed fresh. For those wishing to sit on a goldmine, this golden ale may also be stored at proper cellaring temperatures for several months or years. Over time, the beer will become more refined and smooth as the hop qualities subside.

For 2016, the annual tournament will take place in November at Stone Brewing World Bistro & Gardens - Liberty Station. Stone Brewing Releases Your Father Smelt Of Elderberries

ESCONDIDO, CA (Sept. 8, 2015) – Hear ye, all brethren and sisteren embattled in the quest for fine ales, seekers of the holy grail of fermented potables—we share in your unquenchable thirst for adventure, flavor and experimentation and bringeth thee a quaff built to satiate all three: Your Father Smelt of Elderberries. More mysterious than a Trojan rabbit, more unexpected than the abrupt intervention of peacekeepers at the close of a cinematic epic, this modern take on a medieval beer recipe celebrates the brewsters of yore, forging forward while harkening back to ancient times.

When the Earth’s rotation brings it to a space and time wherein the moon and Jupiter find themselves in perfect alignment (i.e., September eighth of the year two thousand and fifteen), Your Father Smelt of Elderberries shall take its rightful place on the shelves of many apothecary and elixir merchants, and as a means of draft-borne imbibing pleasure at taverns, inns, ale houses and grog shops throughout the kingdom.

Your Father Smelt of Elderberries bridges the realms of historic and contemporary brewing, extracting the tartness of elderberries as brewsters in medieval England once did. This noble fruit has since fallen out of favor along with other spicing agents of eras long past (e.g., mugwort, grains of paradise), with the flowers of the mighty hop bine rising to prominence and providence. So much so, Brewmaster Mitch Steele and his round table of brewing knights saw fit to include Target and Goldings cultivars, thus birthing a complex 10.3 percent alcohol-by-volume ale of unique stock fit for historians and the most fervent of forward-looking beer geeks alike.

Stochasticity Project Your Father Smelt of Elderberries shall be presented in artfully adorned bottles measuring roughly three-fifths of a litre (i.e., twenty-two ounces, for ye of yon New English colonies) and in casks forged of stainless steel. Thine inventive brew is limited in nature and should be sought out and swigged at its freshest or stowed at proper cellar temperatures (55°F or lower).

Stone Brewing Co. Releases Stone Saison, A Modern Take on a Farmhouse Classic

ESCONDIDO, CA (June 1, 2015) – Stone Brewing Co. is reintroducing its take on a traditional Belgian farmhouse ale, using Southern California ingredients grown on its 19-acre farm. Stone Saison is brewed with lemon zest, grains of paradise, lemon thyme, lavender and a small dose of habanero peppers, making it the quintessential refresher for the warm-weather months. Starting today, the beer returns in 12-ounce six-packs and on draft to retailers, restaurants and bars in markets where Stone beers are sold.

“Before we began brewing batches of this year’s release, we looked at a few ways to slightly improve on last year’s recipe for Stone Saison,” said Stone Brewmaster Mitch Steele. “The herbs and spices remain the same, but we adjusted the proportions to create a refined combination highlighting each ingredient while offering a perfectly balanced flavor profile overall.”

 Grown at the craft beer company’s Stone Farms, lemon thyme and lavender contribute floral, citrusy aromas and flavors, while lemon zest and grains of paradise add vibrant grapefruit and white pepper notes that mingle with restrained, earthy heat brought on by habanero peppers. These homegrown specialty edibles balance exceptionally well with the subtle banana and clove qualities courtesy of Stone’s house strain of Belgian yeast. The resulting beer finishes with a crisp, dry and refreshing mix of spices, red apple and a hint of heat.

Stone Saison will be available in limited quantities through the warm and sunny season. The beer’s citrusy, floral and spice qualities will shine through all summer long.

Stone Brewing Releasing Stochasticity Project HiFi+LoFi Mixtape Today

The latest experimental offering from the Stochasticity Project looks to traditional, English-style stock ales for inspiration, while incorporating modern-day ingredients and brewing techniques. A creation cleverly dubbed Stochasticity Project HiFi+LoFi Mixtape, the final beer is composed of 80 percent fresh English Ale (LoFi) blended with a higher-ABV version (HiFi) of the same beer that was aged for several months in red wine-infused oak tanks (referred to as “foudres"). Starting today, the historically-inspired release will begin arriving in 22-ounce bottles and on draft at select retailers nationwide.

Stock ales were mainstays at British public houses in the seventeenth and eighteenth centuries. Known as “beers for holding,” they were stored in oak casks at the breweries or pubs. Because they were typically higher in alcohol than the majority of English beers, they could be aged for prolonged periods of time, during which their flavors would become rounder and more mellow. Rather than serve the stock ales straight up, pub owners would blend the matured stock ale with fresh ales, to help smooth out the latter's rough edges. Brewmaster Mitch Steele aimed to recreate this blended style of beer with Stochasticity Project HiFi+LoFi Mixtape.

“While I was conducting research for my book IPA: Brewing Techniques, Recipes and the Evolutions of India Pale Ale, I learned a lot about the story behind traditional stock ales and the blending process that was done by British publicans,” explains Steele. “This is a brewing style I have wanted to explore and experiment with for quite some time, and I felt that the Stochasiticty Project would be a great platform for doing our own interpretation of this historical technique.”

By blending an extremely fresh, low-alcohol version with a higher-alcohol version of the same ale, the result is a one-of-a-kind, multi-layered beer bringing forth a variety of flavors ranging from toasted malt and light berry nuances to English grains and yeast. Woody, earthy bitterness is present and made possibly thanks to English hop varietals—Fuggle and Target. Tannic grape flavors and aromas are also present thanks to the stock ale's time spent maturing in foudres, previously used to age Northern Californian red wine. This is the first beer from the Stochasticity Project to utilize such artisanal storage vessels.
